This production area, which is the same of the famous Vino nobile di Montepulciano Docg, has an ancient wine-making tradition that is witnessed by many local finds. Vin santo di Montepulciano Doc is produced with traditional techniques, which make it an ideal dessert wine that accompanies Tuscany's typical desserts. Vin santo di Montepulciano Doc comes in two other versions: Riserva and Occhio di pernice. How it is consumed Vin santo di Montepulciano Doc should be enjoyed three years after the harvest. It goes well with typical Tuscan dry desserts and tasty cheeses. It should be served with Prato biscuits, brigidini, buccellato, castagnaccio and ricciarelli in medium-capacity tulip-shaped stem glasses at a temperature of 10-12° C.
How it is conserved Vin santo di Montepulciano Doc should be stored in the horizontal on wooden racks, in dark rooms, at a constant temperature of 10-15° C. It is important to have a humidity of 70-75% to prevent the corks from drying. How it is produced Vin santo di Montepulciano Doc wine-making requires carefully-selected grapes that are dried and then pressed after the 1st of December of the same year of the harvest. As far as concerns the Riserva version the grapes cannot be pressed before the 15th of January of the year that follows the harvest and not before the 28th of February for what concerns the Occhio di pernice version. Grape drying has to take place in appropriate environments. Preservation and ageing have to take place in wooden casks with a maximum capacity of 300 liters (Vin santo di Montepulciano version), 125 liters (Riserva version), 75 liters (Vin santo di Montepulciano Occhio di pernice version).
Vin santo di Montepulciano has to age for at least 3 years; the Riserva version has to age 5 years while Vin santo di Montepulciano Occhio di pernice 8 years. The ageing must take place in wooden casks. Product report
