Vin santo del Chianti classico Doc Link to product report Vin santo del Chianti classico is produced in the same area of the famous Chianti classico. It is considered “the wine of friendship and hospitality” and it comes in different versions. The Secco version is a dessert wine and it is enjoyed as a meditation wine when it is aged for a long time. This Doc, recognized in 1995, still undergoes ancient and traditional producing methods such as grape selection, drying and then fermentation in casks, which are small wooden barrels where the wine completes its production period. How it is consumed Vin santo del Chianti classico can be enjoyed up to 20 years following harvest. It goes well with the area's typical sweets such as Prato biscuits, brigidini, buccellato, castagnaccio and ricciarelli. It should be served at a temperature of 10-12° C in medium-capacity tulip-shaped stem glasses. How it is conserved Vin santo del Chianti classico Doc should be stored in the horizontal on wooden racks, in dark rooms at a constant temperature of 10-15° C. It is important to have a humidity of 70-75% to prevent the corks from drying. How it is produced The Vin santo del Chianti classico Doc production method requires carefully selected grapes, which are then dried and pressed between the 1st of December of the same year of harvest and the 31st of March of the following year. The grapes drying has to be done in appropriate rooms. A partial dehydration with air is allowed. The preservation and the ageing have to be done in wooden casks of maximum capacity of 5 hectoliters. The wine cannot be sold before the 1st of November of the third year following harvest or, for what concerns the Riserva version, it cannot be sold before the 1st of November of the fourth year following harvest. As with other raisin wines, it is necessary to destalk the grapes because dry stalks absorb considerable quantities of alcohol and give a bad taste. After this procedure comes a light pressing, then there is the fermentation, which stops by itself when the wine reaches a high alcohol content. The wine is finally stabilized and bottled.
