Vin santo del Chianti Doc Link to product report Doc Vin santo Chianti was officially recognized in 1997. This has been an important goal for the valorization of a product that is extremely significant for Tuscan oenology ever since the Middle Ages. Its production area is the same of Chianti Docg, namely the townships belonging to the provinces of Arezzo, Florence, Pisa, Pistoia, Prato and Siena.
Vin santo del Chianti is considered “the wine of friendship and hospitality”. It nicely accompanies typical Tuscan dry pastry. How it is consumed Vin santo Chianti Doc goes well with the area's typical sweets, such as Prato biscuits, brigidini, buccellato, castagnaccio and ricciarelli. It should be served in medium-capacity tulip-shaped stem glasses at a temperature of 14-15° C. It can be enjoyed up to 10 years after harvest. How it is conserved Vin santo Chianti Doc should be stored in the horizontal on racks that can absorb shocks and vibrations. The room where the wine is preserved has to be dark and have a constant temperature of 10-15° C. It is important to have a humidity of 70/75% to prevent the corks from drying. How it is produced Vin santo del Chianti Doc wine-making requires carefully selected grapes that are dried and then pressed between the 1st of December (of the same year of the harvest) and the 31st of March of the following year. Grape drying has to be done in appropriate rooms. Partial dehydration with air is allowed. Fermentation follows the pressing, which stops by itself when the wine reaches a high alcohol content. Finally the wine is stabilized and bottled.
Preservation and ageing have to be done in wooden casks and the wine cannot be sold before the 1st of November of the 4th year following the harvest. Product report
