Rosso di Montepulciano Doc Link to product report This wine is produced in the municipality of Montepulciano in the province of Siena. Its excellent quality has been witnessed by many historical testimonies. For example we find it extolled as "the king of every wine" in the short poem "Bacco in Toscana" written by Francesco Redi, an illustrious doctor and naturalist, but also a great poet, in 1685. The success of this poem also gained prestige and popularity for the Montepulciano wine abroad and rendered it one of the most requested wines at the court of William the Third, Kind of England, Scotland and Ireland. The recognition of the controlled denomination of origin Rosso di Montepulciano is recent and joins the one for Vino Nobile di Montepulciano with which it divides the area of production, distinguished from it only by the yield per hectare, the alcoholic content and its ageing. How it is consumed It is a so-called all meal wine, particularly indicated with pasta dishes with bolognese sauce and meats. It is recommended with Florentine-style meatloaf, roasted pork liver, chicken, Florentine-style steak, beans al fiasco, stewed roulade, scottiglia and mature cheeses.
It should be served in balloon wineglasses at 16-18 °C. How it is conserved The rules for the correct conservation of Rosso di Montalcino Doc require the storing of the wine horizontally on wooden shelves, in the dark, at a constant temperature of 10-15°C. Humidity must be in the range of 70-75%, to prevent the corks from drying. How it is produced In the production process of Rosso di Montepulciano, fermentation of the must is with the marc, which during this phase releases part of the substances contained in it, such as anthocyan and tannin. The process of fermentation, of a variable duration, normally lasts for more than 15 days. The phases that follow are the drawing from the vats, which allows the separation of the marc from the must, decanting, refinement and ageing. At the end of these processes the wine is bottled and only after the 1st of March of the year following bottling it is placed on the market. Product report
