Moscadello di Montalcino Doc

Montalcino, renowned for its considerable historical and artistic testimonials, is the home of noble wines. The production of wine in this area of the province of Siena, already appreciated in the past centuries, began to exploit the prime materials and resources of the territory in the second half of the last century leading to recognition of three denominations: Rosso di Montalcino Doc, Brunello di Montalcino Docg and Moscadello di Montalcino Doc. The latter, a desert wine, is obtained from white Moscato grapes and can also be produced in the Semi-Sparkling and Late Harvest types.

How it is consumed

Moscadello di Montalcino is ideal with the traditional Tuscan confectionery such as Prato biscuits, cavallucci, panforte of Siena and ricciarelli. It should be served in medium size tulip shaped glasses at 10 -12°C.

How it is conserved

To conserve Moscadello Montalcino Doc correctly, it should be stored horizontally on wooden shelves, in dark places, at a constant temperature of 10-15°C. It is also important that humidity be of around 70-75%, to prevent the corks from drying.

How it is produced

Semi-dry white Moscato grapes are used for the production of Moscadello di Montalcino. The dry stalks of the over mature or semi-dried grapes are removed, as they would otherwise absorb large quantities of alcohol and a bad taste behind. The next process is that of soft pressing. Fermentation follows the production of the must and is stopped naturally upon reaching a certain alcoholic content (14-16°). This is because although a significant quantity of residual sugar is still present in the product, the yeast is no longer able to transform it into alcohol as a high alcoholic content has already been reached. The wine is then refined, stabilised and bottled. Moscadello di Montalcino can also be produced in the Semi-Sparkling type and, with grapes subjected to further drying, in the Late Harvest type (the obligatory refining in this case is of a year).
