Vernaccia di Oristano Doc Link to product report Vernaccia di Oristano Doc is produced from the grape of the same name, cultivated exclusively in the Tirso river valley, in the province of Oristano. Exportable with difficulty to other geographical areas, the wine produced from this vine was already renowned in antique times thanks to Eleonora d'Arborea, a “judge” of the 14th century, who issued the “Corte de logu”, a collection of laws that rationalized the cultivation of Vernaccia vines. The controlled denomination of origin Vernaccia di Oristano is also produced in the Superior, Reserve and Dry and Liqueur or Dry versions. How it is consumed Vernaccia di Oristano goes well with botargo and smoked salmon and spicy cheeses, spiced fish soups and grilled anchovies. The desert versions are perfect with dry almond-based pastries. The first should be served in medium size flared tulip shaped goblets at 10-12°C, the second in more or less small tulip shaped glasses at 10-14 °C. How it is conserved To conserve this wine correctly the bottles should be stored horizontally on wooden shelves, as this material cushions impacts and vibrations, in the dark, at a constant temperature of 10-15°C and with humidity in the range of 70-75%, to prevent the corks from drying. How it is produced To produce Vernaccia di Oristano Doc the grapes must be harvested perfectly sound and without attacks by parasites. The grapes are softly pressed and the must fermented without the marc that would compromise the colour and quality of the product. Sulphur dioxide is added and at the same time the must is filtered to remove the particles in suspension. Fermentation at a low temperature of the clean must then follows. Finally the wine is drawn from the vats and filtered to clear it of the dregs of fermentation. The wine is again decanted, more sulphur dioxide added, filtered and stored at a low temperature. At this point the wine is ready for bottling.
The Liqueur version is obtained from over mature, dried grapes with the stalks removed which are pressed and the fermentation then stopped through the addition of alcohol. Product report
