Vermentino di Gallura Docg Link to product report The Vermentino di Gallura Docg is produced from grapes of the vineyard bearing the same name. The north part of Sardegna was were this wine arrived in the last century from Spain, and it is here that the Vermentino vineyard prospers, thanks to the granite land and to such a favourable micro- climate. In 1975 it became a DOC, and in 1996 a DOCG, although it is produced in limited quantities, the producers are now doing their best to promote the Vermentino di Gallura Docg even on the international market. How it is consumed The Vermentino di Gallura is served with fish, fish sauce, crustaceans, delicate white meat, Pecorino Sardo, Fiore Sardo, stuffed beans. It is served in chalices for white wines at a temperature of 12°C if served with cold plates, 14°C if served with warm plates. How it is produced To produce the Vermentino di Gallura Docg the grapes are picked perfectly healthy, free of parasites. The grapes are slightly pressed, put to fermentation far from the marc which could compromise the colour and the quality of the product. The grapes are pressed further and sulphited. At the same time the suspended particles are eliminated. The fermentation of the clean must follows, which takes place at a low temperature. Finally the drawing of the wine takes place, during which lees are eliminated. The product is conserved at low temperatures and undergoes further decantation, sulphite and filtrations. At this point the wine is ready to be bottled. If the minimum alcoholic gradation is 13°C it can carry the etiquette Superiore. Product report
