Nuragus di Cagliari Doc Link to product report The origins of the Nuragus vine from which the controlled denomination of origin wines of the same name is produced are uncertain. Some associate the name of the vine to the Nuraghi, stone constructions dating back to the Neolithic period and typical of Sardinia. Having survived the attacks by parasites that drastically reduced other varieties of vines, Nuragus spread throughout the island, also thanks to its capacity to adapt itself to any type of land and climate. It being an abundant fruit producer, the regulations have imposed a maximum yield limit of 200 quintals per hectare. Nuragus di Cagliari Doc is a meal wine in the Dry version and a desert wine in the Medium-Sweet one. How it is consumed Dry Nuragus di Cagliari Doc should be enjoyed with lean hors d'oeuvres and pasta dishes with white fish sauces, shell fish soups, boiled shellfish flavoured with olive oil. It should be savoured in wide tulip shaped glasses, at 10°C if enjoyed with cold dishes and 12°C if with hot dishes. How it is conserved The conservation of these wines requires that the bottles be stored, on their side, on wooden shelves, as this material cushions impacts and vibrations, in the dark, at a constant temperature of 10-15°C and with humidity of around 70-75%, to prevent the corks from drying. How it is produced To produce Nuragus di Cagliari Doc the grapes must be harvested perfectly whole and without the attacks by parasites that could compromise the quality of the wine. In the production method the juice is immediately extracted from the fruit, so that fermentation only involves the liquid part and not the peel. To achieve this end pressing is not always carried out to avoid further deterioration in the prime material and is frequently of the whole grape that serves, in substance, to separate the must from the peel and the other solid parts, reducing laceration of the peel to a minimum. After pressing the must is filtered, the particles in suspension removed, sulphur dioxide added and the must is fermented at no more than 20°C. Finally the wine is drawn from the vats and decanted to clear it. After decanting the product is ready for bottling. The medium-sweet version is obtained with the addition of a little sugar.
