Nasco di Cagliari Doc Link to product report Nasco di Cagliari Doc is produced in the province of Cagliari with grapes of the Nasco vine. The name of the wine apparently derives from the Latin “muscus”, i.e., moss, to indicate the fragrance of undergrowth typical of the grapes from which it is produced. Widespread until the middle of the last century, it suffered a heavy fall with the epidemic of grapevine phylloxera that hit the island as well as the rest of Italy. At present this controlled denomination of origin wine is only renowned amongst the most attentive connoisseurs, and aims at a wider and more heterogeneous market. Nasco di Cagliari Doc is produced in the natural Sweet, Dry, natural sweet and dry Liqueur versions. How it is consumed Natural sweet Liqueur Nasco di Cagliari Doc should be enjoyed with dry pastries, tarts with cream and fruit jams, almond paste biscuits. It should be savoured in small tulip shaped glasses at 12-14°C. The natural Sweet or Dry versions should be savoured with sebadas, mature pecorino cheeses and grilled fish, in large wineglasses at 6-8°C or in flared wineglasses at 8-10 °C. How it is conserved Conservation of these wines requires that the bottles be stored, on their side, on wooden shelves, as this material cushions impacts and vibrations, in the dark, at a constant temperature of 10-15°C and with humidity of 70-75%, to prevent the corks from drying. How it is produced The method of production of Dry Nascò di Cagliari Doc is technically very delicate, given that white wines are more easily subject to alterations by microbes and abnormal fermentation. Its production requires that the grapes be harvested perfectly sound and without attacks by parasites. The natural Sweet version is obtained with the addition of a certain quantity of sugar. The Liqueur version, is obtained by applying a particular technique that produces a high alcoholic content. The grapes are dried by late harvest or drying on the plant or forced. With drying a sweeter and more aromatic grape rich in extracts is obtained. Product report
