Malvasia di Cagliari Doc Link to product report The controlled denomination of origin wine Malvasia di Cagliari is obtained from grapes of the Malvasia vine cultivated in the southeastern area of Sardinia. The wines of this controlled denomination of origin distinguish themselves from the other wines produced with grapes from the Malvasia vines for their very intense flavour and aroma. The Malvasia cultivated in Sardinia does not belong to either of the two large families of Malvasia existing in Italy; nevertheless, from one it takes the intense but delicate aroma, from the other the flavour with a bitter aftertaste. How it is consumed The Sweet Liqueur Malvasia di Cagliari Doc combines with complicated deserts, almond paste pastries, macaroons, spicy and herbal cheeses. It should be served in small glasses that allow the concentration of the fragrance and the aromas at a temperature of 16-18°C. How it is conserved The conservation of these wines foresees that the bottles be stored, on their side, on wooden shelves, as this material cushions impacts and vibrations, and that they are further stored in the dark, at a constant temperature, between 10 and 15°C and with a humidity of about 70-75%, to prevent the corks from drying. How it is produced To produce Malvasia di Bosa Doc the grapes are harvested perfectly sound and unattacked by parasites that could compromise the quality of the wine; they are pressed and later sulphured. At the same time the particles in suspension are removed. Fermentation of the clean must, at a low temperature, follows. Finally, the wine is drawn from the vats and the fermentation dregs remove. The product is stored at a low temperature and undergoes further decanting, sulphuring and filtering. At this point the wine is ready for bottling. Differently from normal white winemaking, in this case however a variable quantity of sugar is added in order to guarantee a sweeter final product. To the Liqueur version a particular technique is applied which creates a high alcoholic content. The method of production allows the addition of alcohol of a grape origin or natural base wine to the must. The Malvasia di Cagliari wine cannot be consumed until after the 1st of July in the year following production of the grapes. a minimum period of ageing of at least two years. Product report

It has an intense, delicate and characteristic fragrance, the flavour goes from sweet to dry, it is alcoholic with a bitter aftertaste of toasted almonds. The Minimum alcoholic content is 140.
