Malvasia di Bosa Doc Link to product report Malvasia di Bosa Doc is obtained from the vine with the same name that, as for all the other Italian Malvasia, has a Greek origin. Having conquered the city of Monembasia, in the Peloponnesus, in the 13th century, the Venetians were able to taste the wine produced from this vine. They appreciated the quality to such a point that they decided to transplant the vine to the island of Crete, from which it later spread throughout the Mediterranean basin. How it is consumed Naturally sweet Malvasia di Bosa combines with non-leaven sweet preparations; in particular it is optimal with apple pies, dried fruit cakes, macaroons and dry pastries, spicy or herbal cheeses. The glass recommended is medium capacity tulip shaped; the ideal temperature is between 10 and 12°C. The sweet Liqueur version combines with baked pastries, doughnuts, jam tarts. It should be served in small capacity tulip shaped glasses at a temperature of 12-14 °C. How it is conserved The conservation of these wines foresees that the bottles be stored, on their side, on wooden shelves, as this material cushions impacts and vibrations, and that they are further stored in the dark, at a constant temperature of between 10 and 15°C and with a humidity of about 70-75%, to prevent the corks from drying. How it is produced To produce Malvasia di Bosa Doc the grapes, harvested perfectly sound and unattacked by parasites that could compromise the quality of the wine, are pressed and later sulphured. At the same time the particles in suspension are removed. Fermentation of the clean must, at a low temperature, follows. Finally, the wine is drawn from the vats and the fermentation dregs remove. The product is stored at a low temperature and undergoes further decanting, sulphuring and filtering. At this point the wine is ready for bottling.
To the Sweet version a certain percentage of sugar is added.To produce the Liqueur version, a particular technique is applied, which creates a high alcoholic content. The method of production allows the addition of grape origin alcohol or natural base wine. The Malvasia wine cannot be consumed until after a minimum period of ageing of at least two years.
